Vegan, gluten-free, nut-free, contains soy
This was my very first soup in my “GG” collection! Introducing “The Ginger,” a pho-inspired rice noodle soup with a lemongrass-ginger broth, veggies and marinated tofu. This soup is named after Ginger, which isn’t actually her birth name but one that came from the Little Red Switch Engine book and stuck. This soup will help toot your engine with that sweet ginger heat! It has bright, aromatic flavours that we had to travel much further East than Ginger’s birth town of Newfoundland to find.
Portion is slightly larger than regular soup - noodles on the side
Option to add a marinated egg!
Ingredients: Lemon grass, ginger, garlic, onions, carrots, bok choy, mixed mushrooms, tofu, rice noodles, lime, chillies, olive oil, gluten-free soy sauce (Braggs), lime leaves, daikon, jicama, lotus root, bean sprouts herbs, spices
